SAN CHOY BOW (CHINESE LETTUCE WRAPS)

Ingredients :
SAUCE
1 1/4 tsp cornflour/cornstarch
3 tbsp water, separated
1 1/2 tbsp light soy sauce (Note 1)
1 tsp dark soy sauce (Note 1)
2 tbsp oyster sauce
1 tsp sesame oil
2 tbsp Chinese cooking wine (or sub-Mirin or dry sherry, Note 2)
1 tsp white sugar (can omit)
FILLING
1 tbsp peanut oil
1 large clove garlic, minced
1/2 tsp ginger, minced
300g / 10Ounces pork mince (ground pork) (Note 3)
1/2 onion, finely chopped
1 small carrot, finely chopped
100g/ 3.5Ounces canned water chestnuts, drained and finely chopped (Note 4)
5 baby corn, canned or fresh, finely chopped (Note 4)
5 mushrooms, finely chopped(shiitake is best, I used Swiss Brown)
SERVING
8 leaves large or 16 – 20 small lettuce, preferably soft (Note 5)
Crushed peanuts
Finely sliced scallions/shallots
Instructions :
1) Mix 1 tablespoon water and cornmeal until completely lump-free. After that, combine the remaining Sauce ingredients.
2)In a wok or large skillet, heat the oil over high heat. After adding the onion, quickly whisk in the garlic and ginger.
3) Add meat after cooking for one minute. Pork should be cooked till white.
4)Include every veggie. Cook the pork for 2 minutes or until it is well-cooked and the carrot is tender.
5) After adding the Sauce, simmer it for 1 1/2 minutes or until it coats the Filling and becomes glossy and thick.
6)Transfer the serving bowl after filling. Place onions, lettuce leaves, and peanuts on the side.
7) Spoon some Filling into a lettuce leaf to serve. Add some onions and peanuts, wrap it up, and enjoy!
