GRILLED JERK CHICKEN WINGS RECIPE

Ingredients :
2 pounds of chicken wings separated and tips removed
4 tbsp salt
4 tbsp Jamaican Jerk Rub/Seasoning
½ cup Jamaican Jerk Sauce
FOR THE JAMAICAN JERK SAUCE RECIPE
5-6 Scotch Bonnet chili peppers chopped (habanero peppers are a good substitute)
1/2 cup brown sugar
1/2 cup white vinegar
1 tsp dried thyme
1 tsp cinnamon
1 tsp nutmeg
2 tbsp soy sauce
1 tablespoon fish sauce
2 tbsp minced garlic
1 tsp ground allspice
Salt and Pepper to taste
Instructions :
1) First, make your sauce by blending all of the sauce’s components in a food processor until smooth, process. Keep chilled until you’re ready to use.
2)Chicken wings should be placed in a large basin. Add salt, then pour water over it. For about 3 hours, cover and brine in the refrigerator.
3)Remove and dry the wings with a towel.
4)Rub the Jamaican Jerk rub onto the skins before placing them in a big basin. Insert it there!
5) Grill the wings for 20 minutes, flipping once halfway through, over medium heat. Watch them carefully to prevent the skins from burning.
6) After the wings are fully cooked, mix them with the Jamaican Jerk sauce and serve.
